Baking & cooking is one of my favorite past times, and as I’m sure most of you can relate, the cooking urge gets amplified in the fall. There’s something so special about a cozy soup and a candlelight dinner or baking with friends. Below are some of my favorite things I’ve baked this month that made my soul a little happier. :)
Tomato Soup & Grilled Cheese
There’s truly nothing like a good tomato soup and grilled cheese. I winged this one, and it turned out so delicious. I tossed fire-roasted tomatoes, garlic cloves, basil, and chicken broth into a pot and let it simmer away. No emulsifier? No problem – a blender worked perfectly.
For the grilled cheese, I went all in with sourdough bread and Gruyère from Trader Joe’s, and loaded it up with butter until it was crispy perfection. Voila – a cozy classic, done right.
Chocolate Chip Pumpkin Loaf
Predictable? Maybe. But for good reason. I snagged this recipe from Tabi on Instagram, and it was such a hit at the Halloween party I hosted. The bread came out perfectly moist without being too sweet, and the chocolate chips? A game-changer.
Not pictured: the cutest Halloween sprinkles from Trader Joe’s that I sprinkled on top for some festive flair. This one is a must-make – trust me, it’s the kind of treat that disappears fast.
Creamy Pumpkin Pasta
I travelled home and was with my family, and my mom and I had a major craving for pumpkin pasta. Enter: Creamy Pumpkin Alfredo Sauc– and I was obsessed. We paired it with Trader Joe’s Fall Zucchette Pasta , which looked beyond cute on the plate and tasted just as good.
To round things out, we tossed together a quick salad with candied pecans, fresh strawberries, and spinach. This cozy combo felt like fall in every bite, and honestly, it’s the perfect dinner vibe for when you want to impress with minimal effort.
Cinnamon Rolls
Okay, I know – no pumpkin in this one, but hear me out: cinnamon rolls are the cozy-weather classic. I whipped these up on a Sunday morning with some autumn jazz playing softly in the background, and let me tell you – instant therapy.
They didn’t stand a chance, but every bite was worth the effort. If you’re looking for a cute date night activity or a sweet little gift idea, these rolls packed in a box will win hearts. Trust me, homemade just hits different.
